The famous Botrytis Cinerea, also known as “noble rot,” which is the key to its deliciously sweet and rich character. This mould thrives in the misty autumn mornings on Pomario’s vineyard, where the fog clings to the terraces until late in the morning, creating a bewitched atmosphere before clearing to give way to sunny, breezy afternoons.
